Almond extract is a concentrated liquid flavoring derived from almonds, commonly used in baking and cooking. To produce it, blanched almonds are ground into a paste and mixed with a food-grade solvent, usually alcohol, to extract the flavor compounds. After softening, the mixture is filtered and distilled. It is commonly used for flavoring in baked goods.
