What is it:
Cold-pressed avocado oil is an unrefined vegetable oil used for cooking, salad dressings, and in some beauty products. It is rich in monounsaturated oleic fats, followed by smaller percentages of saturated and polyunsaturated fats. Cold-pressed avocado oil is made by pressing the avocado oil out of the avocado in a heat-controlled environment, and it retains much of its natural avocado flavor, color, and aroma.

Unrefined cold-pressed avocado oil is a very minimally processed oil that retains many beneficial nutrients and antioxidants that are found in a whole avocado and has been linked to various health benefits, such as reducing inflammation, improving biomarkers of cardiometabolic health, and reducing cholesterol. However, caution should be used with using cold-pressed oil for high-heat cooking, as the free fatty acid content will be higher and the smoke point will be lower than in refined oils. This means that heating cold-pressed avocado oil to high temperatures may result in the degradation of fats and the formation of volatile compounds. Using this variety may be best for dressings, toppings, or low to moderate-heat cooking.
