Naturally refined expeller-pressed avocado oil is a newer method of avocado oil production. Expeller-pressing involves manually pressing the avocado, which usually results in some heat formation. The process of natural refining further separates the oil from pulp and impurities in a temperature-controlled manner without the use of chemical solvents. The end product is an oil that is suitable for very high-heat cooking and has very little of its original color, taste, and aroma.
There is no current evidence that the heat involved in expeller-pressing the avocado oil could be high enough to result in polyunsaturated fat oxidation. Although the natural refining process results in an end product that is different from its whole form, natural refining does allow for a much more heat-stable product that won’t produce volatile compounds during cooking and still retains many beneficial nutrients. Avocado oil has been linked to various health benefits, such as reducing inflammation, improving biomarkers of cardiometabolic health, and reducing cholesterol.
