What is it:

Calcium Disodium EDTA (Ethylenediaminetetraacetic acid) is a synthetic compound often used as a preservative and chelating agent, primarily for its ability to bind to and remove metal ions from food products. It’s used to preserve the color, flavor, and texture of processed foods by preventing oxidative degradation. The production of Calcium Disodium EDTA involves multiple chemical steps in which EDTA, a synthetic compound, is reacted with calcium hydroxide or calcium oxide to form a calcium salt. This salt is then treated with sodium hydroxide to convert it into Calcium Disodium EDTA, which is water-soluble and more suitable for food applications.

Calcium disodium EDTA may be synthesized using harsh chemicals such as formaldehyde. In healthy animal models, calcium disodium EDTA did not show toxic or carcinogenic affects in animals at normal doses. Nephrotoxicity as well as disturbances in zinc homeostasis occurred in some animals at very high doses. One study found that in cases of intestinal inflammation such as irritable bowel disease, it did significantly aggravate inflammation and even induced colorectal carcinogenesis at doses considered safe.
