Cassava root syrup is a sweetener derived from the cassava plant, also known as manioc or yuca. Cassava root syrup is produced through a process of extracting the starch from cassava roots and then enzymatically converting the starch into sugars, primarily glucose and maltose. This process involves crushing the roots to release the starch, which is then purified, hydrolyzed, and concentrated into syrup form. Cassava root syrup is commonly used as a food additive in various food products such as baked goods, beverages, and confectionery items due to its sweetening properties and versatility.
Cassava root syrup is rich in antioxidants and various nutrients. However, cassava root syrup is primarily sugar and doesn’t appear to offer any health benefits as it may in it’s whole root form. Consuming high amounts of sugar in any form has been linked to many adverse health effects such as cardiovascular disease and diabetes. As a less commonly used sweetener, there is no research on it’s health effects.
