What is it:

Coconut sugar is a natural sweetener made from the sap of the coconut palm tree. It is made by collecting, filtering, and boiling the sap until it turns into a thick syrup. Once it has cooled and dried, it is then ground into a fine powder or granules. The end product is about 70-80% sucrose. Coconut sugar is commonly used as an alternative sweetener to table sugar for baking and in some packaged goods.

Rating:

While coconut sugar is a minimally processed sweetener that contains small amounts of beneficial vitamins, minerals, fiber, and antioxidants, it is still very high in sugar which can have negative health effects such as increasing the risk of cardiovascular disease and diabetes. Its glycemic index of 54 is lower than table sugar (~60) and it retains some of its beneficial nutrients after processing, making it a potentially healthier alternative to table sugar.
