What is it:

A manufactured vegan thickening agent that keeps foods like milks, ice creams, jams at their desired consistency. Typically the thicker the food, the more thickening agent used. It is also used to keep the ingredients in the food from separating. It’s produced artificially by fermenting sugar with a specific strain of bacteria.

Rating:

So far, studies have not found toxic effects for Gellan Gum. It is not naturally found in food. Some people may have issues breaking down gums. There is some research that has shown Gellan Gum can change the level of healthy bacteria in the gut which can be harmful to some people and cause inflammatory bowel disease. Gellan gum is usually found in food that is at least partially processed as well.
