Grapeseed oil is a cooking oil extracted from the seeds of grapes, often obtained as a byproduct of the winemaking process. The production of grapeseed oil involves crushing the seeds and then extracting the oil through chemical solvent extraction methods. Then it is further refined with various processes including degumming, neutralization, bleaching, and deodorization. Grapeseed oil is known for its light flavor, high smoke point, and nutritional profile. It is a popular choice for sautéing, frying, and salad dressings.
Grapeseed oil is rich in antioxidants and polyunsaturated fats and is associated with various health benefits, including reducing inflammation and oxidative stress. Additionally, a study on rats found that grape seed oil may enhance cognition in Alzheimer’s disease. However, it is commonly processed with harsh chemical solvents such as hexane and high heats, which may result in the formation of harmful compounds and cause the oil to lose many of its naturally occurring nutrients. Even though it is valued for withstanding high heats, it is rich in polyunsaturated fats that may oxidize during cooking and form harmful compounds.
