Magnesium sulfate, also known as Epsom salt, is used as a firming agent, a color enhancer, and a coagulant in certain foods. Magnesium sulfate can help maintain the texture of canned vegetables and fruits and enhance the color and firmness of pickles and seafood products. In the production of tofu, it’s used as a coagulant to help the soy proteins solidify and form curds. Magnesium sulfate is produced through a reaction between magnesium oxide and sulfuric acid. While used as a food additive, magnesium sulfate is more commonly found in supplements and as a laxative.
Magnesium sulfate can help improve magnesium status and has been used to treat constipation and eclampsia. One study on human gastric cancer cells and in mice suggested that high doses of magnesium sulfate may adversely affect cancer cell proliferation. As a food additive, its effect on the body is unclear.
