Triglycerides (Triacylglycerol) are a type of fat that consists of glycerol and three fatty acid chains. Mixed triglycerides are usually composed of one saturated fat and two unsaturated fatty acids. Triglycerides are naturally found in vegetable oils and synthetically produced by esterification and interesterification reactions. They are the normal storage form of lipid energy in the adipose tissue. Triglycerides are included in foods in order to improve moisture content, act as an emulsifier, and increase palatability.
Triglycerides are essential for human health, however, high levels are associated with cardiovascular disease. There is no benefit to consuming them as your body regulates triglyceride levels based on diet. There is no safety data showing the effect that added mixed triglycerides in food have on health.
