Refined Peanut oil is vegetable oil commonly used in Asian cooking. The refining process involves the mechanical pressing of the oil out of the peanuts and then using high heat and chemical solvents to fully extract the oil. Peanut oil is often used for high-heat cooking, frying, and baking.
The refining process of peanut oil uses high heat that can result in the formation of volatile compounds that are linked to cancer, trans fats, and a significant loss in vitamin E content. Additionally, chemical solvents, such as hexane, may be used which may have negative health effects. Peanut oil is rich in polyunsaturated fats which can be unstable when used in high-heat cooking, which it is often used for. Since it is rich in omega-6 polyunsaturated fat (linolenic acid), it can contribute to a higher ratio than desired of omega-6: omega-3 fatty acid intake that is common in the standard American diet and which can contribute to inflammation. Additionally, some peanut oil can contain allergens that can cause allergic reactions in some people. Some peanut oils may also contain aflatoxins, a type of mold that develops in peanut seeds which can be harmful to health.
