What is it:

Pectin is a carbohydrate (polysaccharide) that is naturally found in citrus fruits, vegetables, and some seeds. It is typically used as a thickening agent and stabilizer in foods. The fruit or plant material is first washed and chopped, then mixed with water and heated to extract the pectin. The mixture is then filtered to remove any solid particles. The solution is clarified by adding a substance such as calcium hydroxide or citric acid to the solution and then concentrated through evaporation. The pectin is then dried to produce a powder. It is mostly found in jams, jellies, medicines, laxatives, sweets, fruit juices, and milk alternatives.

It is naturally occurring in food, however, the extraction process changes it from its natural form significantly. Likely due to its high fiber content, it may help lower cholesterol, improve diabetes symptoms, and may promote gut health.
