Polysorbate 65 is a synthetic compound that belongs to the family of polyoxyethylene sorbitan esters, specifically used as an emulsifier and stabilizer. Its production involves the ethoxylation of sorbitan monostearate, a naturally derived substance from sorbitol and stearic acid, with ethylene oxide. The ethoxylation process allows it to disperse in both the oil and water phases of food products. Polysorbate 65 is commonly found in baked goods, desserts, and confectionery to improve texture, prevent ingredient separation, and extend product shelf life.
The FDA has approved polysorbate 65, however, there is very little safety data available and all is animal research. Studies have suggested that polysorbate 80 and other emulsifiers may contribute to intestinal inflammation, so more research is needed to determine if other polysorbates have a similar effect.
