What is it:

Potassium bromate is a chemical compound that is commonly used as a flour improver and dough conditioner in baking. It is produced through the electrolysis of a solution containing potassium bromide and bromate ions. During this process, an electric current is passed through the solution, which causes the bromate ions to combine with the potassium ions to form potassium bromate. It can be found in many packaged, baked goods.

Rating:

Potassium has shown carcinogenic activity in animal studies and is a potential human carcinogen. It is banned in the European Union, United Kingdom, Argentina, Canada, Brazil, and Nigeria, but is widely used in the United States.
