Potassium sorbate is a preservative used in food and beverage products to inhibit the growth of molds, yeasts, and bacteria, thus extending their shelf life. Potassium sorbate is made by combining sorbic acid, which is created from maleic acid through hydrogenation, with potassium hydroxide. This process results in the formation of potassium sorbate as a white crystalline powder. This food additive is widely employed in various food products, including dairy items, baked goods, beverages, sauces, and dressings, to ensure their freshness and prevent microbial spoilage.
While potassium sorbate is naturally occurring in nature, it is produced synthetically for use in food manufacturing applications. In the body, it breaks down into carbon dioxide and water. It has been accepted by the USDA and EFSA as safe, however, test tube research has shown potential genotoxic and mutagenic potential. More research is needed.
