What is it:
Sesame oil is a flavorful oil made from sesame seeds that has been used for centuries in Asian cuisine. It is produced by first cleaning and drying the sesame seeds, then roasting them to bring out their nutty flavor. The roasted seeds are then ground into a paste to extract the oil which is further filtered to remove any remaining solids or impurities. The extracted oil undergoes a chemical refining process, including degumming, neutralization, bleaching, and deodorization, to remove undesirable components and enhance its clarity, taste, and shelf life.

Sesame oil is rich in antioxidants and polyunsaturated fats and is associated with many health benefits, including reducing inflammation and oxidative stress and improving metabolic biomarkers and lipid profiles. However, chemical solvents such as hexane, may be used in the refining process which may have negative health effects. The polyunsaturated fats in sesame oil can be unstable and oxidize to create harmful compounds when used in high-heat cooking, which it is often used for. However, due to its unique antioxidants, sesame oil appears to be more resistant to oxidation than other seed oils.
