Sodium bicarbonate, commonly known as baking soda, is a white crystalline solid powder that is primarily produced through a chemical reaction involving soda ash (sodium carbonate) and carbon dioxide in water. Sodium bicarbonate acts as a leavening agent in baking, helping dough rise by releasing carbon dioxide when exposed to heat, and it also serves as a mild alkaline agent, contributing to the texture and flavor of many baked goods.
Sodium bicarbonate is produced from naturally occurring compounds and when supplemented with, may improve muscle endurance. There is little safety data on its use in food production, however, there is no evidence suggesting that baking soda is unsafe for consumption in normal amounts. Excessive consumption can cause acute toxicity.
