What is it:

Sodium erythorbate (E315) is a sodium salt of erythorbic acid, which is a synthetic version of vitamin C. It is commonly used as an antioxidant in the food industry to prevent the discoloration of fruits and vegetables and to slow down the development of off-flavors in processed meats. The production of sodium erythorbate involves the fermentation of sugars, typically derived from corn, followed by chemical transformation to convert the resulting erythorbic acid into its sodium salt form.

Rating:

Sodium erythorbate is synthetically produced and derived from corn, which is most commonly genetically modified. Sodium erythorbate is not linked to cancer in animal studies and does not appear to have any toxic effects, however, human research is lacking.
