Tapioca syrup is a natural sweetener made from tapioca starch, which comes from the roots of the cassava plant. To produce tapioca syrup, cassava roots are crushed to extract its starch and then treated with enzymes to break down the complex carbohydrates into simple sugars. This enzymatic process converts the starch into a syrupy consistency. Tapioca syrup is commonly used as a sugar alternative and binding agent in various food and beverage products.
Tapioca syrup is a minimally processed sweetener that has fewer calories per gram and may have a lower glycemic index than table sugar. Aside from providing carbohydrates, tapioca syrup has little nutritional value.
