Yeast extract is a flavor additive commonly used in snacks, cheese, soups, sauces, and seasonings to add a more savory flavor. It is produced commercially through a process involving yeast fermentation and extraction, in which a specific strain of yeast is cultivated in a nutrient-rich medium. The yeast cells multiply and consume the nutrients, producing proteins, vitamins, and flavor-enhancing compounds. The fermentation process is then stopped, and the yeast cells are separated using heat treatment, centrifugation, and filtration. This process removes the cell walls and other undesirable components, leaving behind a concentrated liquid or paste as yeast extract.
Yeast extract is considered a safe additive and a rich source of B vitamins and chromium, a mineral that plays a role in glucose metabolism. It does contain glutamate, which is an excitatory neurotransmitter that can cause headaches or other symptoms in certain individuals who are sensitive. However, the amount of yeast extract used in foods is relatively low, and the amount of glutamate in yeast extract is significantly lower than what’s contained in monosodium glutamate or naturally occurring in vegetables.
