Calcium citrate is a calcium salt derived from citric acid. The production of calcium citrate for use in food involves a chemical reaction between calcium carbonate, typically sourced from limestone or other natural deposits, and citric acid. Calcium citrate is commonly used as a calcium supplement in fortified foods and beverages, as we as an acidity regulator and firming agent in certain food products.
Calcium citrate can help improve calcium levels, however, some research suggests that it may be safer to get calcium from the diet rather than supplemental calcium citrate. In specific health conditions, such as osteoporosis, calcium citrate maybe useful. Calcium citrate is produced with citric acid, which is rated yellow, due to potential health concerns with the use of the bacteria Aspergillus niger in its production, a black mold and known allergen.
